Marinated & Grilled Chicken Breast with Mesculin Greens

Ingredients 4 boneless, skinless chicken breast, pounded thin (1/4”) 6-8 cups mesculin (salad greens) Marinade/salad dressing: 1 tsp. paprika 1/8 tsp. black pepper 2 Tbsp. olive oil 3 Tbsp. rice vinegar 2 Tbsp. reduced sodium soy sauce 1 tsp. sesame oil 2 Tbsp. orange marmalade 1/4 c. orange juice 1 tsp. lemon juice 1/4 tsp. minced garlic 1 Tbsp. grated fresh ginger 1 tsp. grated orange rind
Instructions 1. Combine ingredients for marinade. Reserve half for salad dressing & pour the remainder over the chicken breasts. Refrigerate for at least 15 minutes.

2. Prepare grill. Place chicken on grill for 3-4 minutes each side, or until done.

3. Place greens in large bowl. Pour reserved salad dressing over greens. Toss well and place on four plates. Slice cooked chicken breasts and arrange on top of greens.

4. Garnish with orange slice.

Note: For food safety, do not use any leftover marinade from the raw chicken.
