Mixed Berry Napoleons

Ingredients 1 cup. (8 oz.) fat free ricotta cheese
1/4 cup confectioner’s sugar (or sugar substitute)
1 tsp. vanilla extract
2 cups mixed berries (fresh or frozen)
6 sheets frozen phyllo dough, thawed (18” x 14”)
non-stick cooking spray, butter flavored
Instructions 1. Heat oven to 350 degrees F.

2. Working quickly, take 1 sheet of phyllo dough and spray with butter spray. Repeat with another 2 sheets, stack all 3 together. Cut into 12 rectangles. Repeat with the other 3 sheets of phyllo dough for a total of 24 rectangles. Place on cookie sheet coated with butter spray. Bake for 10 minutes, until crisp & lightly browned. Cool on wire rack.

3. Beat together ricotta, sugar and vanilla until smooth. Fold in berries. spread 1/4 cup of mixture over 1 rectangle, repeat with second, stacking on top of first and top with a plain 3rd rectangle. This makes one Napoleon. Repeat to make 8 Napoleons. Garnish with dusting of confectioner’s sugar.

Note: Phyllo dough can be made 1-2 days ahead and stored in airtight container to keep crisp.
