Turkey Pan Cutlets with Vegetables

Ingredients 1 lb. fresh turkey cutlets (about ¼ inch thick), boneless, skinless
2 Tbsp. all-purpose flour
¼ tsp. ground black pepper (or to taste)
1 Tbsp. olive oil
1 medium onion, sliced thin
1 tsp. minced garlic
1 red bell pepper, sliced thin
2 cups crushed canned tomatoes
1 tsp. minced fresh thyme (or ¼ tsp. dried)
1 tsp. fresh chopped rosemary (or ½ tsp., dried)
¼ cup chopped fresh parsley (or 2 Tbsp. dried)
1 tsp. salt-free garlic-herb seasoning (such as Mrs. Dash or McCormick)
Instructions 1. Toss turkey cutlets, flour & pepper in plastic bag. Shake to coat.

2. Heat olive oil in pan (on medium heat) and add cutlets. Sauté 3-4 minutes on each side and remove from pan.

3. In same pan, sauté onion, garlic and red pepper until light golden brown. Add crushed tomatoes and spices. Bring to light boil, reduce heat and add cutlets.

4. Simmer over low heat 10 minutes in covered pan.

Serves 4.
