Oatmeal Cookies

Ingredients 2/3 cup vegetable oil spread (64% vegetable oil such as Smart Balance Spread)
1 cup packed brown sugar
½ cup white sugar
¼ cup egg substitute OR 2 egg whites
2 tsp vanilla
3 cups quick oats
½ cup all purpose flour
½ cup whole wheat flour
½ tsp baking soda
1 cup raisins or dried fruit
½ cup chopped nuts
Instructions 1. Pre-heat oven to 350° F.

2. In bowl beat vegetable oil spread, sugars, egg substitute & vanilla. Set aside.

3. Combine oats, flours, baking soda & mix well.

4. Gradually add flour/oat mixture to sugar mixture & mix until just combined. Fold in raisin & nuts, if desired.

5. Drop by rounded teaspoon onto cookie sheet sprayed with non-stick cooking spray.

6. Bake 12-15 minutes or until lightly browned. Cool on wire racks. Makes 5 dozen.
