Roasted Potatoes

Roasted Potatoes

Ingredients ¾ cup fresh breadcrumbs
¼ cup Romano cheese, finely grated
1 T parsley, chopped
½ t dried oregano
¼ t salt
¼ t coarse ground black pepper
1/8 t paprika
1 garlic clove, minced
1 T olive oil
24 small red potatoes (about 3 lbs)
vegetable oil cooking spray
1. Combine breadcrumbs, cheese, parsley, oregano, salt, pepper, paprika and garlic. Set aside.
2. Combine potatoes and oil in a large zip-top plastic bag and toss to coat potatoes with oil.
3. Toss potatoes in breadcrumb mixture.
4. Place potatoes in a 13”x9” baking dish coated with cooking spray.
5. Bake at 400 degrees for 45-50 minutes or until tender, stirring occasionally.
