Spanish Rice

Spanish Rice

Ingredients 1 t olive oil
½ cup onion, chopped
½ cup red bell pepper, diced
½ cup green bell pepper, diced
2 t jalapeno pepper, seeded and finely diced
1 T garlic, chopped
1 10oz can diced tomatoes, undrained
3 cups chicken stock, reduced-sodium
2 t cumin
2 cups brown rice, uncooked
½ cup green onion, chopped
2 t fresh cilantro, chopped
1 t salt
¼ t black pepper
Instructions 1. Heat the olive oil in a large pot over medium heat. Add the onion, red and green bell pepper, jalapeno, and garlic. Cook about 5 minutes or until the onion is translucent, stirring often.
2. Add the tomatoes, chicken stock, cumin and rice. Stir gently. Bring to a boil, reduce the heat to low, cover and simmer for 15-20 minutes or following package directions on rice.
3. When rice is finished and liquid absorbed, add the remaining ingredients and mix well (green onions, cilantro, salt and pepper).
