Maine Blueberry Yogurt Muffins

Maine Blueberry Yogurt Muffins

Ingredients 2 cups flour, all-purpose
1 t baking powder
1 t baking soda
¼ t salt
1/3 cup sugar
1 egg, beaten or ¼ cup egg substitute
¼ cup unsweetened orange juice
2 T vegetable oil
1 t vanilla extract
1-8 oz container vanilla low-fat yogurt
1 cup blueberries, fresh or frozen (thawed)
cooking spray
1 T sugar
Instructions 1. Preheat oven to 400 degrees.
2. Combine flour, baking powder, baking soda, salt and 1/3 C sugar in a large bowl.
3. Combine egg or egg substitute, orange juice, vegetable oil, vanilla and yogurt in a small bowl. Add to dry ingredients.
4. Stir just until dry ingredients are moistened. Batter will be lumpy.
5. Fold in blueberries.
6. Coat a 12-muffin tin with cooking spray.
7. Spoon batter into 12 muffin cups. Sprinkle tops with sugar
8. Bake 15-18 minutes until top is golden brown.
9. Remove from tin and cool on wire rack.
