Italian Sausage & Tortellini Soup

Italian Sausage & Tortellini Soup

Ingredients Olive oil cooking spray
1 lb. reduced-fat sweet Italian sausage, casings removed
1 cup onion, chopped
2 large garlic cloves, sliced
3 cans beef broth
2 cups tomatoes, chopped (about ¾ lb)
1- 8 oz can tomato paste
1 large zucchini, cut into bite-sized pieces
1 large carrot, thinly sliced
1 medium green bell pepper, seeded and chopped
½ cup dry red wine (optional)
2 t basil, dried (or 2T fresh)
2 t oregano, dried (or 2T fresh)
8-10 oz cheese tortellini purchased fresh
Salt and pepper
Freshly grated Parmesan cheese
Instructions 1. Saute sausage in heavy soup pot over medium-high heat until cooked through (about 10 minutes), crumbling with fork. Using a slotted spoon, transfer sausage to a large bowl lined with paper towels.
2. Pour off drippings and spray pan with cooking spray.
3. Add onion and garlic to pot and sauté until translucent, about 5 minutes. Return sausage to pot.
4. Add stock, tomatoes, tomato sauce, zucchini, carrot, bell pepper, wine, basil and oregano. (If using fresh herbs, add last with the tortellini.)
5. Simmer until vegetables are tender, about 20 minutes.
6. Add tortellini to soup, bring back to a boil and cook until tender, about 8 minutes.
7. Season soup to taste with salt and pepper.
8. Ladle soup into bowls and sprinkle with Parmesan.

Makes 6 servings.
