Cranberry Sweet Potato Bread

Ingredients 1 Tbsp. baking powder
¼ tsp. baking soda
¾ cup all-purpose flour
¾ cup whole wheat flour
1 cup packed brown sugar
1 ¾ tsp. pumpkin pie spice
1 cup egg substitute
1 cup cooked mashed sweet potato (unseasoned)
½ cup non-fat sour cream
¼ cup unsweetened applesauce
2 Tbsp. molasses
¼ cup chopped walnuts
¼ cup dried cranberries
Instructions In a large bowl, stir together first 6 ingredients. In a second bowl, combine egg, sweet potato, sour cream, applesauce and molasses. Add the wet ingredients to the dry ingredients and stir until just blended. Add the walnuts and cranberries.

Spray cooking spray on the bottom of a 9x5 inch loaf pan. Pour batter into pan. Bake at 350º for one hour (or until toothpick inserted in center comes out clean.) Cool in pan for 10 minutes and then remove bread. Cool completely on wire rack before slicing.
