Oriental Turkey Salad

Ingredients 1 pound cooked turkey
1/2 cup sliced celery
1/2 cup snow peas
1/4 cup diced red bell pepper
1/4 cup sliced scallions

2 cloves garlic
1 Tbsp. lite soy sauce
1 Tbsp. rice vinegar
1 Tbsp. finely chopped fresh ginger (or 1 tsp. ground ginger)
Instructions For the dressing, crush garlic cloves. Combine with remaining ingredients and stir until sugar is completely dissolved.

For the salad, dice the turkey. Toss the diced turkey with the vegetables. Pour the dressing over the turkey and vegetables and toss to combine.
Makes 5 servings.
