“See-food” Pasta with Spinach, Tomatoes, Shrimp and Feta Cheese

Ingredients 1 lb. pasta (any type, such as penne)
1 Tbsp. olive oil
1 tsp. minced garlic
1 medium onion, sliced
1/2 lb. shrimp, deveined
2 pkg. fresh spinach, cleaned and chopped
1 can (14.5 oz) stewed tomatoes
1 cup chicken stock (or low-sodium chicken broth)
fresh ground pepper to taste
1 tsp. salt-free seasoning (McCormick Garlic & Herb or Mrs. Dash Roasted Garlic & Pepper)
1/2 cup feta cheese
1 Tbsp. grated parmesan or romano cheese
Instructions Cook pasta and set aside. Heat olive oil and saute garlic and onion until translucent. Add shrimp & cook until pink (or if using cooked shrimp, cook about one minute). Remove shrimp from pan & set aside.

Add to pan: spinach, tomatoes, chicken stock, pepper, and salt-free seasoning. Cook until spinach is wilted (5-10 minutes) at medium heat. Add shrimp, feta cheese, and grated parmesan. Add the cooked pasta and serve.
