Beans & Greens with Pasta

Ingredients 1 Tbsp. olive oil
1/2 lb. poultry sausage, cut in 1/2 inch pieces
1 tsp. minced garlic (or as desired)
1 can (14.5 oz.) white cannelloni beans, drained & rinsed
1 fresh bunch of escarole, washed & chopped
1 tsp. salt-free garlic herb seasoning (such as McCormick or Mrs. Dash)
1 tsp. fresh ground black pepper
1/2 lb. pasta (any type- penne or ziti work well)
1/4 cup grated parmesan cheese
Instructions Cook pasta al dente in a pot of boiling water, set aside. Heat olive oil in another pan. Add garlic and saute for 1 minute. Add sausage and cook on medium heat until lightly browned and thoroughly cooked. Add drained and rinsed beans. Cook additional 2 minutes on medium. In the same pot of boiling water, add chopped escarole and blanche, 3-4 minutes. Drain & add to sausage - bean mixture. Add seasonings. Toss in pasta and cheese. (Add more of the same boiling water if more liquid desired.) Garnish with 1 Tbsp. grated parmesan cheese.
