Light Cabbage Slaw

Light Cabbage Slaw

No cooking! Great for a hot day.
Level of Difficulty
Ingredients 1 pkg. shredded cabbage slaw (16 oz.)
½ c. each of sliced green onions and shredded carrots
½ red pepper, thinly sliced and chopped.

½ c. rice vinegar (unseasoned)
¼ c. olive oil
2 tsp. sesame oil
1 Tbsp. light soy sauce (reduced sodium)
1 Tbsp. brown sugar
2 Tbsp. chopped unsalted peanuts
¼ tsp. black pepper

Instructions 1. Toss together vegetables in a bowl. Set aside.

2. Combine dressing ingredients, except for peanuts and pour over cabbage and vegetables.

3. Garnish with chopped peanuts. Refrigerate until ready to serve.
