Asian-style Cucumber Salad

Ingredients 2 cucumbers, peeled & sliced very thin
1/2 red pepper, sliced thin
1/2 mild onion, sliced thin (such as a vidalia onion)
1/4 cup rice vinegar (plain, not seasoned)
2 Tbsp. olive oil
1 tsp. sesame oil
2 tsp. light brown sugar (or sugar substitute)
1/4 tsp. white pepper
1 Tbsp. reduced sodium soy sauce
1 Tbsp. chopped, unsalted peanuts

Instructions 1. Place sliced vegetables in bowl.

2. Combine remainder of ingredients (except nuts), whisk until sugar is dissolved. Pour over vegetables.

3. Garnish with chopped peanuts.
